Couple of weeks ago I did a half-day course to learn how to cook some food tailanesa . I take my turn after nearly two years in Thailand . Generalizing, Thai cuisine is based on meat or fish dishes accompanied with rice, nodeles dishes (noodles) also fried meat or seafood and hot soups (usually spicy and many made with coconut milk) with white rice.
I was offered the course of a known a small travel agency near the backpacker area Khao San Road and I could not refuse since it was something that had long had in mind.
We met the chef in the backpacker area and after 6 travelers pick went to the market to buy the ingredients. There we explained a little about what we were going to cook and what kind of vegetables we needed. It was a traditional Thai market (chaotic) with all of stalls selling their wares.
Once at school, it was pretty simple but necessary had we started cutting vegetables and making them ready to start using the wok (Chinese-Thai paella).
The first two dishes we cooked were the famous Tom Yum Kung (red curry) and Green Curry. Both dishes spicy, like most Thai cuisine, but delicious. In the Tom Yum Kung put three chillies while the cook told us that for a Thai usually put 10.

At the end of eating these two dishes began to prepare the ingredients for the next and final dish: the Padthai. The Padthai is the most popular dish among tourists in Thailand. It is fried noodles with omelette, tofu and shrimp, chicken or pork to consumer choice. We became very rich!
Where do a Thai cooking class in Bangkok?
Make a half-day course or a day is a good option if you're tired of visiting temples or you've fallen for tailanesa food. Most courses are a morning or a day and cost between 900 and 2500 Baht (the cheapest you will find them in travel agencies in the area of Khao San). Some schools are known: Khao Cooking School , Silom Thai Cooking School , Amita Thai Cooking School and Baipai ,
If you are interested in a longer course at a professional level, one of the most famous schools are: Blue Elephant .
Other courses that are usually made in Thailand are about massage, diving, kitesurfing, muay thai , Thai and even English and Chinese.

Their basic travel cheap book used to recommend a few courrier companies and they were definitely legit (I knew people who did the courrier thing on a regular basis), but that was some time ago. It always involved thinking a long way ahead or being able to travel at the drop of a hat for a period of time specified by the courrier agency, not you, courriering each way, so you couldn't accumulate ...weeek later, NYC to/from Bangkok. The bargains were to be had in the last minute trips. One example of a person who did this was a freelance Israeli textile designer living in NYC, able to do what she did anywhere. She used it to travel to visit her relatives in Israel whenever a last minute Israeli commission was available. The recent security laws may have made such travel much less practical.

OK your on a hostel budget...don't worry. Most hostels are fine just not your typical run down hotel a little less and sometimes a little better. There are travel agencies everywhere in Bangkok you will never have trouble finding one. For your visas go to the thai visa office, don't do it through a travel agency because half of the time they are fake then your screwed. Plane tickets can be bought through any travel agency, I prefer to call the airlines direct and get a price, or just by at the airport. I have never had a problem with air tickets in Thailand. The train is worth checking out as well. To Suratthani is an overnighter but it's alright. most trains anywhere take a while but you get to see the country. You can find tons of cheap hotels.
